CAPERS IN BRINE

Caper is the edible bud of Cappasis spins, which is a wild growing plant.

Capers are handpicked between June – August and are transferred to the facility for processing. After calibration capers are prepared as in brine or salted or as paste per customer’s request.

Capers in Brine or in Salt are available with different sizes as below, small sizes tend to be rarer and valuable.

Sizes of Capers:

• 3-5 mm: Lilliput
• 5-7 mm: Non-pareille
• 7-8 mm: Surfine
• 8-9 mm: Capucine
• 9-11 mm: Capote
• 11-12 mm: Fine
• 12+ mm: Horse

Packaging can be in Jars, Tins, Buckets, Drums in various sizes.

CAPERBERRY

If caper buds are not picked, they blossom in to Caperberries. They are harder than capers and have seeds. Caper berries are typically sized in to three groups; 0-15 mm, 15-18mm and 18-22 mm.

OREGANO

Origanum onites, Origanum vulgare

There are mainly two different varieties of oregano commonly traded in the industry. Origanum onites is the main variety that grows in Turkey. Origanum vulgare variety is also available from this region. Oregano in nature has above 3 % volatile oil. Main oil component of the oregano is carvacrol. There may be some sub-species that contains thymol as the main component.

ANISEED

Aniseed is sweet and very aromatic, distinguished by its characteristic flavour. The seeds, whole or ground, are used for preparation of tea as well as in a wide variety of regional and ethnic food and drinks. The most powerful flavor component of the essential oil of anise, anethole, is found in both anise and an unrelated spice indigenous to northern China called star anise. Star anise, being less expensive than mediterranean aniseed, is more used for its essential oil.

Cumin is the dried seed of the herb Cuminum cyminum, a member of theApiaceae family. The cumin plant grows to 30-50 cm (12-20 in) tall and is harvested by hand. Turkey supplies 6-7% of the worlds cumin consumption. We are the largest processed Mediterranean cumin supplier. We also cultivate our own cumin. Cumin is available in whole seed and powder form. LAUREL LEAVES

Laurus nobilis

Also called bay leaf, this aromatic herb is manually collected from the evergreen bay laurel tree which is native to the Mediterranean. The two main varieties are Mediterranean (Turkish) and Californian. In fact, the two types of bay leaves are not even directly related. Fresh California bay leaves (Umbellularia californica, Lauraceae), come from a tree that has a decidedly more potent eucalyptus flavor that can easily dominate a dish if you're not careful, while Turkish bay is much milder.The oval-shaped Mediterranean or "true laurel" leaves are the variety most commonly found in the market. Largely supplied by Turkey, these have a more subtle flavor than the oilier, more narrow leaves produced by laurel trees grown in California.

Salvia officinalis, Salvia triloba

Sage is available in two varieties. Salvia officials and Salvia triloba. Salvia officinalis, is imported from Albania or Dalmation Coast is also cultivated in Turkey. This variety mainly goes to the USA. Salvia triloba is the Turkish Sage which grows wild and mostly consumed in Europe and Far East.

THYME

Thyme, Thymus vulgaris

Thyme is a relative of Oregano. Oregano is mostly traded in the market as thyme.

The essential oil of common thyme, contains 20-54% thymol. Thymol, an antiseptic, is an active ingredient in various commercially produced mouthwashes. Before the usage of modern antibiotics, oil of thyme was used to medicate bandages.
